I know it is tough to envision having a "favorite" way to extract pain without killing, but there's some thing about the clever style and brutal efficiency of medieval torture that fascinates me.
My personal favorite are the crocodile shears, a nasty devise designed specifically to cut off the penis of criminals who committed the highest of crimes, such as assassinating the king. Luckily, there are couple of accounts of it ever becoming utilised.
